Vegan Falafels Made On A Skillet Recipe

Ingredients:
-1 can chickpeas, drained and rinsed
-1/2 cup breadcrumbs
-1 small onion, diced
-2 cloves garlic, minced
-2 tablespoons fresh parsley, chopped
-1 teaspoon cumin
-1 teaspoon coriander
-1/4 teaspoon cayenne pepper
-Salt and pepper to taste
-Olive oil for cooking
-Optional toppings: diced tomatoes, chopped cucumber, hummus, tahini sauce
Instructions:
1. In a food processor, combine the drained and rinsed chickpeas, diced onion, minced garlic, and chopped parsley. Pulse until well combined, but not completely smooth.
2. Transfer the mixture into a mixing bowl and add in the breadcrumbs, cumin, coriander, cayenne pepper, and salt and pepper. Mix well until everything is evenly incorporated.
3. Form the mixture into small balls, about the size of a golf ball. Press and flatten slightly to form a patty.
4. In a skillet, heat 1-2 tablespoons of olive oil over medium heat. Once hot, add the falafel patties to the skillet. Cook for 3-4 minutes on each side, until golden brown and crispy.
5. Serve the falafels hot off the skillet with your choice of toppings such as diced tomatoes, chopped cucumber, hummus, or tahini sauce.
